Covid Shortages

Covid Shortages

These past seven months we have discovered many things we took for granted in short supply during this Covid 19 episode. Toilet paper seemed to be the most obvious. That was until I started canning the produce from the garden. At first I though Wal-Mart hadn’t ordered enough lids–until I checked several different outlets to no avail. My son, Josh checked everywhere in the Kansas City area. Nothing. I then checked the never-fail Amazon.com. Every outlet said they were out…

My Terrible, Awful, Wonderful Day

My Terrible, Awful, Wonderful Day

Ever lock you keys in your car? Last week when my son, Josh, and I were in Louisburg, KS I managed to do just that. I focused more on finding canning jar lids than keys in hand when I left my truck. When we came back and discovered what I’d done I looked at Josh and said, “Now what?” I knew the days were past for police getting into cars for people like me. “Just call the insurance company, Mom….

Hiding Place

Hiding Place

Recently, on a trip to the Ozarks I found a copy of Jory Sherman’s book My Heart is in the Ozarks in the place where we stayed. It’s rather old, but Jory’s words never lose their poetic beauty. In one of the pieces in that book I read where the name Ozarks means “hiding place.” I can’t find a confirmation of that definition anywhere, but I like it anyway. When I go there, the outside world seems to disappear. There are…

Idyllic Ozarks

Idyllic Ozarks

We recently accepted an invitation from an old high school friend to visit his guest house west of Branson, Mo. We did all the touristy stuff but also took time just to “be” in the beauty of the hills. I took this photo the last morning we were there. The cabin sat on a 200 acre pasture. I snapped this photo one morning in the early-morning fog as the cows moseyed toward the near-by pond for an early morning dip….

A Different Birthday Cake

A Different Birthday Cake

Two of my granddaughters are born on the same date, two years apart. This year I decided to bake them a huge cupcake for their birthday. Rather than make my traditional chocolate cake I decided to make a carrot cake instead. Rather than grate the carrots, I put them in my new Insta Ace blender (Pictured here.) Wow! In only two pulses I had two cups of chopped carrots. I pulled out a can of pineapple. The recipe called for…

The Return

The Return

Have you heard of the day of prayer that is planned for September 26? It’s called “The Return.” People from all over the nation plan to gather on the Mall in Washington D.C. Since that might not be a wise thing to do in these uncertain times of Covid, they are also going to broadcast the day for people to gather in their homes to join together in seeking God for our nation and world. This particular date is…

Homemade Yogurt

Homemade Yogurt

I went to the grocery store for some yogurt to put in my blueberry smoothie. For five cups, they wanted $12.00. Like a dummy, I paid it. At that rate, I’d end up paying too much for my breakfast. I decided to make my own. I took four tablespoons of the expensive stuff and put it in a half gallon of Aldi whole milk for $1.69 according to the recipe below. The next morning I had this container full–at a…
