Strawberry Preserves Time

Late May/early June signals time to make strawberry preserves at my house. Aldi had strawberries on sale this week and I made several runs on my local store and made off 30 pints.

Here is a picture of the result of some of them.

 

If you’ve never made them, it’s very simple.

Wash and stem several pints of strawberries. Cut them into quarters. Place them in a large pot and add an equal amount of sugar. Heat the pot on low while the sugar melts.

Increase the heat while the berries cook. Watch the pot so it doesn’t boil over. A white froth will form on the top as it boils. Skim that off and let the berries boil in a slow roll for 20 to 30 minutes.

Turn the heat off. Leave the pot until the next day so the berries will absorb the juices.

I sterilize the jars and lids in the dishwasher. Fill sterilized jars with the cooled berries.  Make sure the jars are filled to the very top and screw the lids on tight.

There is no need to seal the jars because they don’t spoil with all the sugar in it.
