When winter becomes a drag, I turn to cooking. This apple cake was one of my family favorites. I included it in my book Family Favorites From the Heartland. 

Gram’s Raw Apple Cake

Ingredients:

½ cup butter
2 cups sugar
2 eggs
2 cups flour
2 teaspoons soda
pinch salt
2 teaspoons cinnamon
1 teaspoon nutmeg
5 grated large apples or 7 small ones (Granny Smith work best) Combine all ingredients, adding apples last. Bake in a 9 x 13 cake pan at 350 degrees for 50 min.

Butter Icing:
2 sticks butter
2 cup sugar
½ cup milk

Combine and cook in an iron skillet until soft ball stage. Beat until it thickens and quickly smear it on the cake.
